Recipe: Vegan Creamed Spinach

Hands down one of our favourite vegetables to eat and cook with. Great for salad, stir fry, side dish, dip, and even soup! Now here's another fun way to incorporate this super food to your diet.

500g fresh baby spinach

2 cups almond milk

1 tablespoon nutritional yeast

2 tablespoons all purpose flour)

1 pinch nutmeg

Salt and pepper to taste

  1. Preheat large pan over medium low heat. Add olive oil and sauté the spinach with a pinch of sea salt until wilted. Toss and as soon as the spinach releases its water, transfer to a strainer to drain well.

  2. In a medium sauce pot mix together milk, flour, nutritional yeast, and nutmeg. Season with salt and pepper, bring to a simmer and whisk continuously until thick and creamy (about 5 mins).

  3. Remove cream sauce from heat and gently fold in the sautéed spinach. Taste and adjust seasoning.

  4. Transfer to a serving plate. Serve hot.
