When an ingredient is in season and super fresh, it's great to show it off in all its glory! That's what we've done with this simple sautée asparagus dish, cooked in vegan butter and parmesan, and topped with toasted almonds.

3 tbsp vegan butter
1-2 bunch asparagus
1 tbsp fresh flat-left parsley (minced)
1 tbsp fresh mint (minced)
3 tbsp vegan parmesan
2 tbsp almond flakes (toasted)
Salt and pepper to taste
Melt the vegan butter in a large skillet or frypan over medium heat.
Add asparagus, season with salt and pepper.
Sautee for 5 to 6 mins until the asparagus is just tender. Lower the heat if needed to keep the asparagus from browning.
Remove skillet from heat, add parsley and mint.
Add 2 tablespoons parmesan and mix well.
Transfer to serving plate, top with remaining parmesan and toasted almonds. Serve immediately.
