Recipe: Green Tea Soba Noodle Buddha Bowl

After eating our way through all the chocolate in the house, we are ready to kickstart a healthier week.
Ingredients:
1 pack green tea soba noodles
4 quarters broccoli (cut into florets)
1 avocado (sliced)
½ carrot (shredded)
½ pack spicy tofu
1 tsp sesame seeds (optional)
1 tbs sesame oil
1 tbs soy sauce
Salt and pepper to taste

Method:
1. Bring a large pot of lightly salted water to a boil and fill a large bowl with ice water
2. Boil soba noodles for 3 minutes
3. Strain and quickly place noodles into iced water. Drain, add sesame oil and soy sauce and mix well
4. Bring a small pot of lightly salted water to boil and fill a small bowl with ice water
5. Add broccoli to blanch for 1 minute, strain and place broccoli into iced water. Drain
6. In a serving bowl place Soba noodles, broccoli, sliced avocado, shredded tofu and carrots
7. Add salt and pepper to taste, sprinkle sesame seeds to garnish
Serve cold or warm
