Recipe: Vegan Shiitake Mushroom Wonton Soup

This is our vegan equivalent to chicken soup, but better, because you can feel, taste, and SEE the love that went into this warm bowl of wonton soup.

This vegan shiitake mushroom wonton soup is fun to make (especially with a partner), easy to master, and delicious to taste. Check out this how-to video and learn how to cook and fold cute little wontons from Bodhi’s owner, Heaven Leigh, and Head Chef, Brooke Ng.


For the Wontons

50g asparagus

50g water chestnut

50g shiitake mushrooms

1 teaspoon ginger (grated)

1 Tablespoon soy sauce

1/2 teaspoon sesame oil

16-20 vegan wonton wrappers

For the Wonton Soup

1/2 Tablespoon vegetable oil

1/2 teaspoon sesame oil

1 teaspoon ginger (grated)

5 cups vegetable broth

2 cups chinese cabbage

Shiitake stems

1 bunch bok choy (optional)

1 ½ teaspoon chinese cooking wine

Soy sauce or salt to taste



  1. Clean the shiitake mushrooms and remove the stems (save stems for stocks)

  2. Diced the shiitake caps and place them in a medium bowl.

  3. Cut water chestnut and asparagus into small pieces.

  4. On a stove top. In a medium size cooking pan. Add oil, heat for a minute. Add ginger, sauté for a a minute. Add shiitake, water chestnut and asparagus, turn up the heat. Cook for 2 minutes.

  5. Stir in soy sauce and sesame oil.

  6. Set aside the wonton filing. Allow to cool.

  7. Fill a small bowl with water.

  8. Arrange a wonton wrapper on a plate or work surface. Place about 1 teaspoon of filling in centre.

  9. Dip fingers in water and moisten the edges of the wonton wrapper.

  10. Fold in half, over filling, to create a triangle. Press the edges together to seal. Draw the side corners of the wrapper inward, join and press them together to seal, creating a loop.

  11. Repeat until all of the filling and wrappers are used.

  12. To cook the wonton, bring a large pot of water to boil. Place wontons in boiling water and cook for 4 minutes or until they float. Remove wonton straight into serving bowls.

Wonton Soup

  1. Place a large pot on a stove top, medium heat. Heat vegetable oil and sesame oil. Add ginger and mushroom stems. Sauté for 1 minute, until fragrant.

  2. Add broth, raise the heat, add cabbage, and bring it to a boil. Add bok choy if using, cook for 1 min.

  3. Remove pot from heat. Season with soy or salt to taste.

  4. Ladle broth into wontons serving bowl. Serve warm.
