Start your day off right with this colourful yet comforting breakfast bowl of goodness, with warm oatmeal, chia seeds, fruits and coconut.
1 1/2 cups rolled oats
2 tbsp chia seeds
1 tbsp pure maple syrup (or preferred sweetener)
3 cups coconut milk
1 fresh vanilla bean (halved and scraped)
Seeds and nuts
Add oats, chia seeds, maple syrup, coconut milk and vanilla bean to a medium-sized saucepan.
Bring to the boil over medium-high heat, then reduce heat and simmer for 5 to 10 mins, stirring occasionally.
Once oatmeal has thickened and liquid has been absorbed, transfer to a bowl.
Top with toppings, and add more milk if desired.
