Recipe: Warm Winter Breakfast Bowl

Start your day off right with this colourful yet comforting breakfast bowl of goodness, with warm oatmeal, chia seeds, fruits and coconut.

Oatmeal ingredients


1 1/2 cups rolled oats

2 tbsp chia seeds

1 tbsp pure maple syrup (or preferred sweetener)

3 cups coconut milk

1 fresh vanilla bean (halved and scraped)


Toppings


Fresh strawberries

Kiwi fruit

Mandarin segments

Seeds and nuts

Coconut flakes


Method

  1. Add oats, chia seeds, maple syrup, coconut milk and vanilla bean to a medium-sized saucepan.

  2. Bring to the boil over medium-high heat, then reduce heat and simmer for 5 to 10 mins, stirring occasionally.

  3. Once oatmeal has thickened and liquid has been absorbed, transfer to a bowl.

  4. Top with toppings, and add more milk if desired.

  5. Serve warm.
