600g sweet potato, peeled
180g all-purpose flour (spare more for dusting) (use gluten-free flour for gluten-free option)
½ tsp salt
Cut sweet potato into 1 inch chunks. Add to a medium-sized pot and cover with cold water.
Bring water to the boil. Boil for 15-20 minutes, or until tender.
Once the sweet potato is cooked, drain water and add sweet potato to a large mixing bowl. Add salt.
Use a masher or hand mixer, mash until very smooth.
Add flour. Use a large spoon, stir to combine. Knead with your hands just until the flour is fully incorporated. Do not overknead.
Place dough on a lightly floured work surface. With a sharp knife, cut dough into 4. Take a piece, roll into a long rope, cut into 2cm pillows. Roll the pillows on a fork to form ridges in the dough.
Bring a medium or large pot of salted water to a boil. Drop half the gnocchi into the boiling water. Once they start to float, boil for an additional 2 minutes.
Using a slotted spoon, remove boiled gnocchi. Add the remaining gnocchi, cook.
Serve warm with desired sauce.
