Making your own pesto pasta is so much easier than you realise, and there's nothing like the flavours you get from a fresh sauce, compared with a bottled sauce you buy from the supermarket.
½ cup pine nuts
½ cup olive oil
1 tbsp lemon juice
2 cups fresh sweet basil
Ground black pepper and salt to taste
1. Cook pasta according to the instructions on the packet
2. Put basil, pine nuts, lemon juice, olive oil and salt & pepper through a food processor until well blended
3. Once the pasta is cooked, strain and add in pesto sauce. Mix well
4. Add vegan parmesan and enjoy!
